We're going to be staying at a nice hotel down in ATL tomorrow night + going out for steaks to celebrate, but I still wanted to cook something yummy tonight. We both love duck confit, so I've got that ready to go into the oven, and I'm going to throw together an endive salad (basically chopped endive, roasted pecans, a few bits of browned prosciutto with a homemade vinaigrette). That is my paleo/Whole 30 go-to meal when my husband and I want something delicious, healthy, and a bit special, but don't want to put a ton of effort in to it! ETA: Here's the recipe/instructions I use for the duck. It's basically foolproof.
