There is some debate about whether coconut is in or out for AIP. My judgement is to include coconut unless you can identify that you have a problem with it. A few people respond badly to coconut, but as best I can tell the numbers are small.

I had some problems with bloating when I ate shredded coconut. That was several weeks ago. I seem to be doing better with it now. I think it's a personal thing, like Tom said.
