The general rule of thumb is the mayo could be trusted as long as you would trust the egg it was made with. However, I would not hesitate to eat eggs that have been in the refrigerator for 6 weeks and I might not trust mayo that old. Link to post Share on other sites

However, I find that the texture starts to change after about a week, so I usually replace mine around that time. It rarely lasts a week in our house anyway. Link to post Share on other sites
