thursday84
Ok folks, I've got to bring a dish to a LARGE family gathering tomorrow, and I'd prefer to bring some meat. I'm also doing butternut squash & eggplant. I've got about 2 lbs of lean ground beef to work with - any suggestions?

thursday84
That actually sounds really good, but I live in south Mississippi and its hot as hell here right now! Like triple digits - so I'm betting most of the fam would skip over chili though I will def give this recipe a try when fall comes around! Thanks for the link
GFChris
How about Moroccan meatballs? The recipe calls for ground lamb, but I'm guessing ground beef would work too? http://www.theclothesmakethegirl.com/2009/03/05/mmmmm-moroccan-meatballs/ You could also make a baked frittata with the ground beef. Here's a recipe with ground turkey, but again, I'm sure you could substitute. http://www.foodonthetable.com/recipes/397257-green-eggs-turkey-paleo-comfort-foods (Note: I made this last week - very important to let it cool at least 30 minutes before cutting, to let the pieces hold together.) GFChris
Oh cool! I hope you and your family like them! I made them about a week and a half ago, and I thought they were to die for! That Melissa Joulwan (creator of the website I sent you with the chocolate chili and moroccan meatball recipe) is a genius: she's the one who wrote the Well Fed cookbook, and has a very helpful instructional video on her website to make paleo mayo. Enjoy your day!
1Maryann
I made these for the first time last week and they were awesome. Recipe from our mod, Johnny M. So many layers of flavor! And the sauce rocks, too! http://www.eatingforidiots.com/coconut-curry-lamb-and-beef-meatballs/
