You can typically sub chicken/beef/veggie stock for wine or other alchols depending on the flavor you are looking to impart. Or, I don't know, vinegar or something acidic? It's only 1/4 cup so I guess even just water wouldn't affect it much. But I'm not a great cook so I really don't know what would work best.
