cayenne
So, many months ago, I started an herb garden in my excitement to cook much more. I have 2 types of parsley, basil and rosemary. They are growing well and I need to figure out what the heck to do with them! I guess I can always chop and add to salads etc. Any good ideas out there? GFChris
Add the basil and parsley to recipes for meatballs, tomato sauce and any frittatas or quiches you might make. Rosemary on chicken - yum. Use basil in a gazpacho. Fresh basil leaves on top of huge slices of tomato drizzled with olive oil and balsamic vinegar - yum.
ldmd
You can make pesto with the basil (recipe in ISWF), and it and the rosemary are great in tomato based sauces. Or make a thai curry and garnish it with basil. Rosemary is very powerful, so start with a small amount (1 teaspoon minced) for 4-6 servings. You can always add more. And roasting a chicken with sprigs of rosemary either inside or around the bird will give it a lovely flavor.
Roz Griffiths
You can dry the rosemary in a very low oven & then crush together with sea salt for a herb salt - nice on a bit of salmon
