Can I have Berries with Coconut Whip? or is this considered dessert?

Yeah, like Kim said: if you're eating it like a dessert than that's not in the spirit of W30, even if it is technically compliant.  As part of meal and not being eaten in isolation as a sweet treat, it's ok.

 

I couldn't stop treating it like a dessert, so I steered off it and brought it back happily when I finished my W30.

You could substitute vanilla powder for the vanilla extract to make it technically compliant, but you'd still be faced with the "dessert" question. I'd say, make it at your own risk.

Hmm ... I've never heard of vanilla powder before.  Just googled it and found a brand on amazon that has evaporated cane juice in it (which would make it not compliant).

 

Do you have a brand that you use, that would work on the Whole30?

Or you could just buy vanilla beans on ebay http://www.ebay.com/itm/50-Extract-Grade-B-Madagascar-Bourbon-Vanilla-Beans-6-7-/290678095433?pt=LH_DefaultDomain_0&hash=item43adc3be49 and split them to get the seeds out and add it to the coconut milk, then steep it on the stove for 10-15 minutes.

 

As someone who raises orchids, I'd also like to point out that the vanilla "bean" is actually the seed pod of the flower, and that ALL orchids produce seed pods when polinated, just most orchid seed pods are not used in cooking. That vanilla powder said that vanilla orchids are the only fruit-bearing orchid, but it's not a fruit at all.

Ouch - no thanks - I'll stick with plain fruit.  :)

You can make your own vanilla powder for the cost of a few vanilla beans (they're still not cheap, but they're not $85 either). I buy mine in the spices section at my local co-op. http://www.tinayelle.com/how-to-make-vanilla-bean-powder/

 

Also, I feel like there is a recipe with berries and coconut whip in the recipes section of it starts with food... I lent the book to my mother a while back, so I can't look, but I swore there was something like that in there.
