Vicks Posted July 10, 2012 Share Posted July 10, 2012 This is a veggie dish, a good side for your protein or just if you want to eat a lot of vegetables in one sitting..Nothing fancy but it tasted really good to me, so I figured I'd share it. I took 4 BIG mushrooms, unwashed, chopped them up (looked about 3/4 cup maybe more) and mixed in about 4 cloves of garlic, also chopped. Coated them with olive oil and put them in the oven to bake in a dish at 450 for 20 minutes until brown, buttery, perfection. While that was cooking, I deribbed the chard and tore them into manageable pieces, rinsed (did NOT pat dry), and cooked on low-medium heat in a big skillet until they were soft and the water was gone. Then I mixed it all up and ate it! The olive oil took on a great flavor from the mushroom/garlic and there was a bit left as I mixed it in so it was basically a dressing in itself. I didn't find any additional seasoning necessary (at least not salt), but I could imagine you could spice it up a bit and add some herbs if you like.
