Just Real Food
Up until very recently, the compost heap has been the recipient of the leftover broccoli and cauliflower stalks. And these days there are plenty of stalks available! Not any more - Here are some ideas of how to use them. Broccoli stalks taste like mild asparagus and cauli stalks are quite sweet - http://justaboutrealfood.blogspot.co.nz/2013/07/eat-stalks.html Any other ideas out there? jenna@mymissingfactor
I just do to them whatever I'm doing to the florets - leftover boiled or steamed broccoli and stems often end up on breakfast hash/omelettes too.
Moderators Tom Denham Posted July 12, 2013 Moderators Share Posted July 12, 2013 I steam stalks until tender and then puree them in my food processor with ghee, salt, and garlic powder. I often mix in carrots to give me more volume of puree. Another good addition is spinach.
