Honey Sue
I was going to make the California rolls from Well Fed until I saw that they contained jicama which is, sadly, nearly impossible to get hold of in Sweden. As I don't know what it tastes like I'm not sure if/what I could use as a substitute. Turnip/some kind of radish/sweet potato/squash? Any ideas? Bethann67
Jicama is mild flavored, not quite sweet, and its crispy and crunchy and great for dipping!( and REALLY hard to cut!) IF its the crunch you are going for I'd sub water chestnuts... Otherwise I'd "forget" to put it in.
missmary
yeah, texture is similar to a radish, flavor is mild and sweet. It has a crisp raw-ness to it that could not be replaced with squash or sweet potato. If you must have another vegetable, shredded carrot or julliened radish/daikon would work, but you could also just leave it out as Bethann suggests. Vian
I think water chestnuts would be an excellent replacement for it! They have a similar light crisp texture (Jicama is similar to apples in texture, but less sweet and just a tad spicy.) Daikon radish might be good for the flavor. Maybe use both water chestnuts and daikon radish?
malie
I think cucumber would be nice as well!
