Randy R Posted July 22, 2013 Share Posted July 22, 2013 I was a big fan of Parmesan crusted chicken. Obviously making it up the traditional method was never Paleo. Last night I Paleo'd it up and it was amazing. Ingredients- 1/2 cup of Olive Oil Mayo (The version in Well Fed is my favorite) 1/4 cup of Almond Flour (This is replacing the Parmesan to help get that crunchy texture) 4 boneless, skinless chicken breasts (Whole Foods has a wonderful praire raised, no antibiotics or hormones brand) 4 Tsp of Whole30 approved Italian Seasoning Directions Preheat oven to 425°. Combine Mayo with Almond flour in medium bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise mixture, then sprinkle with Italian seasoning. Bake until chicken is thoroughly cooked, about 20 minutes. I serve this along side roasted garlic (cauliflower) mashed potatoes and they taste and texture are just spot on and so very satisfying.
