brscott
I was wondering if you can freeze coconut milk after opening. I never use a full can and it doesn't keep for more than 2 days and I would like to freeze in ice cube sizes for future use. Any thoughts?
Roz Griffiths
Yes, i freeze leftovers in half cup/cup amounts. It separates a bit & goes a bit grainy, but once it's mixed in with your food you can't notice
Angela N.
Two days? Mine always lasts at least 5-7 days in the fridge. Am I missing something?
wrightandres1
It totally works. I like to use an ice cube tray or a muffin tin. I would suggest not to freeze the milk more than 2-3 days.
Sarah T
Two days? Mine always lasts at least 5-7 days in the fridge. Am I missing something? Mine lasts longer, too... well, it would if it lasted that long in my house. Now that I'm making my own it's tough to not just drink it!
praxisproject
I find coconut keeps best in glass, with as little air available on top as possible. It won't keep well in tins/cans or plastic. I have frozen both coconut cream and coconut milk, also handy for plopping in your hot coffee to cool it down, or soups for a bit of extra creaminess
