We have a freezer full of bear bacon (husband shot and had processed) as well as elk meat. Are these okay on the 30? Sounds silly asking, but I'm not sure how meat is processed when its your own. If someone else processed the meat for you, especially the bacon, is it possible to ask them what they use? Is it marinated or cured and, if so, what with. Nitrites are OK but sulphites are out. Also out is sugar or any form of sweetener, dextrose, maple syrup, etc. Most pig bacon is cured with some kind of sugar but I've absolutely no idea about bear bacon. Actually I got so curious here, I had to go and look it up OK no one seems to recommend using any sweetener on bear bacon and the recipes I came across used nitrates but not sulphites so if it's been processed that way, it would be fine (I'd still check if possible). You can only have it if you mail some to me!!! :D I'd stay away from the bacon during your Whole30, but the rest of the bear meat should be fair game. Same with elk. Most processors have a standard brine for their bacons, and it will almost always include sugar unless you specifically ask for it not to. Link to comment Share on other sites More sharing options...

Although I understand the flavor of the meat changes drastically depending on the time of year and the sex of the bear. Maybe I got some old boar who'd eaten too much fish.
