These two recipes from Melissa Joulwan (Well Fed) are great:

You do have to add a protein, though.  I like to throw whatever meat I have leftover into the bowl of soup, stick it in the microwave, and in two minutes I have my breakfast!

I'm planning on making the Cream of Broccoli soup today - I got a ton of broccoli yesterday and I don't want it to go bad - still adjusting to the empty nest when I shop.    I was thinking it would be good with some grilled meat, otherwise it doesn't seem like enough protein for bfast... or maybe some HB eggs?  Mmmm...

Whenever I cook a whole chicken, I pull the meat off the bones and freeze in single portion sizes. I do the same with joints of meat. That way, whenever I'm having a soup that's low in protein, I just pull out a packet and add it to it. I've also been known to thaw a handful of cooked prawns and just throw them in my bowl and pour the soup over them.
