Hey Everyone!

I'm new here and planning to start my first W30 tomorrow, along with my parents. I'm loving the idea of egg muffins, but I have a pretty picky eater in my father and am looking for new ideas. He won't eat onion, garlic, mushroom, or seafood. 

 

Anyone have any suggestions for flavor combos for egg muffins? I would really appreciate it. Thanks!

Prosciutto, asparagus...definitely spinach and peppers.

 

Think of an omelette.  That is where I began.  What are the veggies that one would eat at breakfast in an omelette?  I started there and then anything went within a matter of days.

 

Could you make separate ones for him and tuck in the yummy stuff you want in some of them?

Herbs are the key for sure. I've made them (as well as fritattas) and I am not a fan of the texture (reminds me of sponges). But, pack in enough veggies and herbs (also leftover protein) and I can handle them.
