I'm loving the idea of egg muffins, but I have a pretty picky eater in my father and am looking for new ideas. He won't eat onion, garlic, mushroom, or seafood. Guest Posted July 31, 2013 Share Posted July 31, 2013 Prosciutto, asparagus...definitely spinach and peppers. Think of an omelette. That is where I began. What are the veggies that one would eat at breakfast in an omelette? I started there and then anything went within a matter of days. meloict Posted August 1, 2013 Share Posted August 1, 2013 Herbs are the key for sure. I've made them (as well as fritattas) and I am not a fan of the texture (reminds me of sponges).
