ltlfroggie Posted August 5, 2013 Share Posted August 5, 2013 Day 1! I was at Girl Scout camp over the weekend so had a lot of starchy carbs...hope that doesn't bite me in the butt in a few days! Breakfast: 2 whole eggs and 2 egg whites scrambled (organic eggs). Organic, unsweetened applesauce with organic strawberries. Small handful of cashews Snack: about 3 hours after breakfast, stomach was rumbling but I couldn't take lunch yet at work. Had another small handful of cashews Lunch: pot roast (that hubby lovingly made for me while I was at camp, taking special care to find a Whole30 recipe!), a couple of skillet sweet potato chunks (still learning to like them...), banana and more cashews. Sorry, got cashews this weekend... Dinner: hoping for a chicken breast over my very large salad of spring mix. Will add some guacamole and salsa. I feel a little sick to the stomach too...blaming the cashews. I've had that before when eating too many nuts. msssjenna Posted August 5, 2013 Share Posted August 5, 2013 good job so far! only issue I see is no vegetables at breakfast or lunch. I would ditch the applesauce and scramble lots of veggies with your eggs. also eat a large spring mix with your pot roast. it takes some tweaking but it gets easy, i promise! Physibeth Posted August 5, 2013 Share Posted August 5, 2013 I like to scramble my eggs into sauteed kale or spinach. In bacon fat or ghee is lovely. Also I would eat the whole eggs for all 4 eggs. Yum! What veggies do you know you like? You could look up frittata and quiche (crustless) recipes for other ideas. I came into this lifestyle veggie hesitant as well. Treat yourself like you would a child and make yourself try at least one new veggie a week. Try it multiple times. You will be amazed by how quickly your taste buds start transforming! I don't know why, but it is one of those anecdotal things that has come up a number of times. amberino21 Posted August 6, 2013 Share Posted August 6, 2013 I'd also eat all eggs whole - dont throw away your organic yolks!!! I love mushroom and leek in omelettes, with thyme. Also capsicum and tomato. I usually put handfuls of spinach in the middle as well..... ltlfroggie Posted August 7, 2013 Author Share Posted August 7, 2013 Day 2: #1 - 3 whole eggs fried in ghee, applesauce with cinnamon (working on the fruit...I think!); better to just have all protein and no fruit if I can't stomach veggies in the morning? #2 - Applegate turkey, green apple, hard boiled egg snack (pre WO) - LaraBar (had the PB cookie one...just realized I am not supposed to have peanuts, start over??) #3 (post WO) - spring greens with strawberries, raspberries, chicken breast with olive oil and balsamic vinegar dressing I felt better yesterday - think I had some kind of bug Monday with my head killing me and my stomach not happy at all (started early in the morning though before I even started eating food).
