InkblotJo Posted July 13, 2012 Share Posted July 13, 2012 So, I frequently joke that I never outgrew my "baby food" stage. I tend to enjoy food in the form of mush. Before paleo, this mean things like hummus/bean dips, lentil stews, smoothies, puddings, yogurt, etc. I don't really miss that many foods while on paleo, but I tend to miss the texture of something smooth and thick. I know there are several paleo options that can be pureed-- avocados, sweet potatoes (and other roots and tubers), and cauliflower. But nothing totally hits the spots. Here it is--I'm sure you could leave out the tahini just to be 100%. http://www.girlcooksworld.com/2011/08/zucchini-hummus.html Zucchini Hummus * 1 large zucchini, cut into chunks * 1/2 cup tahini * 1 clove garlic, peeled * 1 Tablespoon olive oil * 2 Tablespoons lemon juice * 1 teaspoon sea salt * 1 teaspoon cumin * 1 teaspoon cayenne Combine all the ingredients in a high powered blender or food processor and process until smooth.
