I was curious if anyone knows of a Whole 30-approved recipe for pickled watermelon rinds.  It's something that I stumbled across today, but all of the recipes I can find have lots of sugar.  (I've always preferred sour pickles over sweet pickles, anyway!)

Though, I would probably leave out the peppers because I am not a big fan of heat in my food.

I like the sound of the one you found because it will be a true fermented food. What does a watermelon pickle taste like?

 

I'm not really sure.  I just thought it was a neat way to use up bits and pieces that I usually throw out. :)  If I get a chance to make them, I'll let you know!
