orianaoracle
I was curious if anyone knows of a Whole 30-approved recipe for pickled watermelon rinds. It's something that I stumbled across today, but all of the recipes I can find have lots of sugar. (I've always preferred sour pickles over sweet pickles, anyway!) Here is an example that uses sugar: http://www.smallfootprintfamily.com/watermelon-rind-pickles. Thanks in advance!
orianaoracle
Aha, I may have found one! http://www.tealightfullyours.com/raw-brine-pickled-watermelon-rinds-or-half-sours-raw-cultured-vegetables/TeaSmittenMomma Though, I would probably leave out the peppers because I am not a big fan of heat in my food. I would still love to hear if anyone else has any sour/savory recipes!
Susan W
I like the sound of the one you found because it will be a true fermented food. What does a watermelon pickle taste like?

I'm not really sure. I just thought it was a neat way to use up bits and pieces that I usually throw out. If I get a chance to make them, I'll let you know! Susan W
Oh please do report back. I have to say that horses LOVE watermelon rind so I am thinking it might have a nice flavor. Horses dont like yucky stuff.
