Pilau "Rice" for Curry Night

I made a lovely chicken and butternut squash coconut curry for last night's supper. I didn't want to make a separate rice dish for my husband and a separate vegetable dish for me so I combined them. I shredded cauliflower and cooked it in ghee with onions, garlic, ginger, turmeric, saffron, fenugreek and cardomom pods.

It was heavenly! Such a great complement to the curry and my husband loved it. Very satisfying dish, I didn't even miss the hot buttered naan he was eating. But I did covet his glass of wine!

Ok, had to check this out for the name if nothing else. Pilau to those of us in Hawaii means stinky or rotten. I figured (hoped) that this was not the case, lol! Learned something today, thanks the magic of the internet - pilau is a variant of pilaf. Aha!
