The advice is definitely not to delay, but I did before mine as I knew I would have significant obstacles and wanted to set myself up for the best success. That said maybe treat this as a warmup week. Do the best you can while still enjoying your vacation and don't go on a pre-W30 bender (trust me you will feel better the first week if you don't). Maybe plan on making one of your meals each day fit the template and limiting yourself to one special treat a day. Good luck on your 30 days!
