terryd Posted August 27, 2013 Share Posted August 27, 2013 I was nervous and going to wait until Sept 1 to start, but decided over the weekend to jump in . Today was my first day and I made it through --- although the day seemed 2 days long! I am still getting familiar with all the in's and outs. I tried curry paste for the first time today too. Used it with some coconut milk for the chicken tenders I made. I cook for 4 adults and 3 children and even the 3 yr old grandchild liked the sauce. Never having curry before I wasn't sure what to expect so I used the least amount - next time I will double that! I had been practicing breakfast for a few days - so instead of a couple of measly eggs - I had a scramble with onions, grilled squash and peppers, some leftover pork roast and a handful of spinach. I am using coconut oil to cook with and am loving it. Meal 2 was 1/2 can of tuna on a bowl of fresh spinach with cantaloupe chunks - dressing was a small amount of mayo. and vinegar and oil. Meal 3 was sautéed green beans and sweet potato chunks with chicken tenders and curry sauce toping all. I have really hard issues with snacking in the evening. So I have made it a point to have all the food out of this area and to cut the TV off - have my glass of water and now it's time to sign off here. I had a huge energy drop just after eating this evening while I was taking the dog for a walk - you know that 30 pound weight - but it didn't last long. Just waiting for the train to start unloading - so to speak - so I can get started "cracking eggs". Have a great night!! I am working on sleeping issues - some days easy to go to sleep and get the 7 - last night my brain was working overtime - so I laid there "thinking" for around 2 1/2 hours........argh. Finally sleep came until 4:30 or so. Now I will need to be on guard to eat only the 3 meals planned -- no snacking.......still fighting sweet "wants" - which I'm sure I will for a few days or longer. I am trying to put my fruit toward the end of my meal and nothing in between. I only ate three meals but it helped that I didn't get to lunch till after 1pm and dinner was early at 6pm. Don't be afraid to give yourself permission to eat extra, especially in the early days if you are hungry... Much better to have four meals than crave and eat unbalanced snacks. But sounds like you know how to tell the trigger. When I detox I get strong hungry feelings that are hard to beat sometimes so I plan four meals. Strangely I sleep well during the detox stage then have insomnia for the second two weeks for some strange reason. I hope your brain lets you unwind tonight. Meal 1-- 2+ eggs scrambled poured on top of sweet potato chunks, green beans, onions and spinach; topped off with homemade salsa. I couldn't eat it all so I saved it for lunch. (or an emergency morning snack) Trip to YMCA - walked 1 1/2 miles on tread mill in 30 minutes then 30 more minutes on the weight machines upper body. First time back in a month. Felt so good - may not seem like a lot to some, but was major for me. Meal 2 - remainder of scramble plus 2 chicken tenders and more veggies. Added a couple of strawberries and a banana. (I know too much fruit) Meal 3 big plate of salad greens topped with 1/4 apple slices, 2 strawberries, mushrooms, handful of shredded pork on top. Used evoo and balsamic vinegar. While cleaning up I ate another banana - bad I know, but I was trying to buffer my evening. No snacks now - this is the witching hours and I feel full and satisfied. I look forward to the day that my thinking is clean too - seeing fruit and wanting it. The junk food thing is not bothering me (family still has stuff) - at least for now. terryd Posted August 29, 2013 Author Share Posted August 29, 2013 DAY 3 - so far so good. Last night I fell asleep easily, but woke up at 12:30 and was up a couple of hours. Went back to bed fitfully and got up at 5:30 to start the day. One thing I forgot to put on my other days is when I get up, I shower, then I fix my first cup of coffee with at least a Tblsp. of Coconut Oil, 2 Tblsp. of Great Lakes gelatin, and about 3 or 4 Tblsp. of Coconut milk. I cook everyone else's breakfast and then sit at the table with mine....... Meal 1 - leftover sweet potato and green beans with 2 chicken tenders chopped up, onions, spinach and 2 eggs whipped in. Ate every bite and topped it with strawberries. Meal 2 was 3 chicken tenders chopped, on a bed of salad greens topped with EVOO and Balsamic Vinegar. Chopped up a couple of strawberries and 1/2 an apple for the mix. Meal 3 was smoked sausage, sauerkraut and a fresh batch of roasted green beans and sweet potato--- and I added a diced apple - topped with cinnamon. I also roasted peppers and onions sprinkled with turmeric and caraway seeds. Mood ok - I did do some deep cleaning on 3 of the 5 bathrooms today. Hope this is the start. I want to use gelatin more, do you premix it into a creamer with the coconut? I had a good three days but today was meh.... Navigated a work lunch quite well but the coffee I had made me crave nuts and fruit after dinner, also being tired too... I hope we both get a good nights sleep tonight. I just make my coffee, let the co melt in it, add the gelatin, then the coconut milk and use a frothier to get it all mixed in. Poor mans Bulletproof coffee. I have always liked my coffee black and still do, but when I started dropping wheat - folks on the WB blog were talking of how Cream helped the CO and then someone started talking about how good gelatin is for you. Got to investigating and have been using the gelatin about 7 months. I didn't really notice a huge difference ( of course this wasn't long after I had dropped the wheat/grains etc - and in doing that I did a 360 in how I felt) but I took it for 6 months - when it came time to order - I stopped it for about a week --- I could tell the difference in my joints, feet, back, etc. So I am definitely sold on it. I generally take 2 Tblsp in my coffee (there abouts) in the morning. I need to get back to drinking and making bone broth. It is satisfying -but with the summer - I'm not much on hot soups. I hope you get some sleep as well -- I was bad and didn't go to bed until almost 11 last night, but I did sleep solid till 5. I am absolutely wiped out today, but no naps as I had the wee one all morning and then picked up the other wee one at lunchtime.....THEY do still NAP -- for which I am eternally grateful... EXHAUSTED for most of the day, but just after dinner I felt a little better. STRANGE. Meal 1 - Scramble with leftover green beans/sweet potato mix, onions, small amount of smoked sausage and kraut...scrambled about 2 1/2 eggs in. I ate about 3/4's of it and put the rest in the fridge for emergency or lunch. Using coconut oil in the mornings for my scrambles. Meal 2 was 3/4 of a smoked sausage - chopped, around a cup ++ of fresh cabbage, chopped up small apple and a bit of onion - sautéed in CO. Meal 3 - Pork chop - cut up on top of 2 to 3 cups of salad greens, onions, tomatoes, topped with EVOO and balsamic vinegar. Ate a banana to quell my evening witching hours........ I was not in control at all today - fought getting a snack - twice I ate about 8 macadamias - once in Am and once in Pm.......quelled it. My goal on W30 is to not eat in between meals. I am tired today and had to get into my emergency tuna stash at work at 4pm as I just couldn't concentrate... I don't think the decaf long black I had at 11 am helped! I did try a spoon of gelatin in my cocoa this morning, that was easier than I thought. Hope tomorrow is a better day for us... I will re-read my log - I thought I was eating too much protein - ah well....live and learn........I'm trying to figure out my menu for next week and hoping to get it done - I have no idea what to fix tonight - I'm thinking I have fish filets in the freezer and that would be an easy go to meal.......Seems the freezer holds a lot of secrets that need to be worked on before the grilling season is over. Hope you rest - I am having a time getting to sleep this week. Laid in bed last night for 1/2 hr thinking and decided to get up and research - which is not what I want to do at night -- one of my goals is sleep by 10 or so I finally laid my head back down at 11:30 - slept till my emergency alarm woke me at 5:30.....I'm usually waking by 4:30 or 5pm. I have read a lot on sleep and think that is one of the main health issues -- I have sleep apnea - wear a cpap. Hoping it wil improve with W30(I know it may never go away) especially since I have "turkey neck" - lots of skin......or ah chins??? Thank you for chiming in here. Everything was much better today. Mood. Mind. Energy not up yet, but I do FEEL better. Trying to go from concentrating on food to stirring other lost thoughts in my mind - other lost goals and things I want to do. LIKE exercise more! Meals today seemed a little strange - - no urgency. Not incredibly hungry either. Meal 1 - always my first cup of coffee includes Coconut oil, Great Lakes Gelatin, and coconut milk; smoked sausage, cabbage, sweet potato, Onions and one egg. Meal 2 -smoked sausage, left over veg. – little, cabbage and an apple late about 2:30. Meal 3 - 1/2 can tuna, roasted sweet potato, squash and a few pieces of apple stirred in the mix; roasted cabbage with caraway seed. Really funny feeling kind of not hungry. I don't ever remember feeling like that. I'm sitting here in the evening, worst time of all for snacking and I'm feeling - ok - no need.......HOPE it will last for the remaining 25! I am "analyzing" my supplements - I think too many, but when I ready why I'm taking something - I think I need to keep taking it - at least for awhile. Haven't had breakfast yet - will soon - short road trip with hubs today - it looks like it will rain off and on. Hope to be home in time to watch OSU - Go Bucks and 1st game of the season. Have had my coffee with coconut oil, coconut milk and GL - modified version of bulletproof coffee - I call my td coffee. One cup like this and then 1 or 2 more before noon. Thanks for the gelatin info. I am really getting to like the thicker feel of the coffee with it now. And I haven't woken up sore today after a fairly hard class yesterday. My aim is to be medicine and supplement free. This is just a personal goal for me as the rest of my family take so much stuff.... Mainly medicine. I have nothing against supplements, if chosen for a specific reason. I recently tried vit d and enzymes etc but they messed up my stomach. Now perhaps the gelatin could be considered a supplement?? It was his first day of 4th grade and he had ran out of the house before I snapped a picture. I had him turn around -- he is such a love.... As to the gelatin, I consider it to be like bone broth - because I am not diligent about drinking the soup broth for the goodies it has. I forget or I just plain get tired of drinking or souping it! Gelatin is just a part of my everyday start up. I did talk to a gal that comes to the states a couple of times a year - before she arrives she ships the Great Lakes to a friends and then packs it back to her home. She also said it is available for overseas shipping on Amazon.com, but the shipping costs are way overboard. Meal1 was later than normal - had my td coffee(coconut oil, coconut milk and GL gelatin). No eggs this morning, but had a serving of leftover shredded roast pork, leftover roasted squash and sweet potatoes, onions sautéed in coconut oil. Meal 2 – late lunch about 1:30 - large plate of salad greens, broccoli, serving and ½ of pork chops cut up on top, small apple, tried some Hazelnut oil for a change – meh – tried some red wine vinegar for a change – meh – I need to make some salad dressing or stick with EVOO and Balsamic or ACV. By evening I was tired. Not exhausted, just good ole' tired. Family had grilled cheese and tomato soup - I know yuk. It was a struggle for me to have something compliant, but I did. I need to prepare Sunday - work it out and get more variety to my veggies. Meal 3 - I found the rest of my tuna from yesterday, a couple of small chicken tenders, onion, squash, and mushrooms - sautéed them and put some coconut aminos on all of it. The coconut aminos saved the day as it was rather bland and hard to get down. BUT I ate it, and had just a finger full of coconut flakes to top off the meal. So glad this day is done. Wellness meats are out of bacon(compliant with W30) - I am missing my non-compliant bacon that I eat when I don't eat W30. Yea - it's only 24 more days......shew..... I love ranch dressing - I am not using it at all during whole 30 - so I use oil and vinegar. I know there is a compliant ranch - but I just don't get it made up - that or the mayo. So I do without. How silly am I? I'm sure it wouldn't take anything much to do either and would make my greens/salads more palatable to me. I think about doing it and then I shove it aside. It is the same with my getting my "home" in order. I see a project i started and just can't seem to finish it. What's up with that? Repairing a piece of clothing, straightening my closet, cleaning off my bathroom sink, throwing out excess stuff or getting rid of extra "things" I don't need. I hope by the end of W30 I can change this mindset, or at least get it on the road to change. In some things I have always been a (don't shudder) a procrastinator! When I was working this was not possible. I used to host a small group Bible study in my home for 12 to 30 people cooking a meal. Never knew how many were coming - always had enough food. Now I can't begin to do something like that, let alone get my closet cleaned out. (Closet really has many meanings in my case, not just the physical closet where I store my clothes.) W30 has been so good for me---getting some of the cobwebs out of my head is an interesting process. I am finding that the DAILY is very important! Reading it 2 to 3 times a day and writing down what I am feeling and or eating is smoothing out a lot of rough paths in my life. Today is prep day - after church - off to re-supply groceries and prepping in the afternoon ( or not) I can always do it on Monday - can't I? Meal 2 - plate full of salad greens - chopped broccoli, onions, whole tomato, whole avocado and just a small slice of salami and 1/2 slice of roast turkey from the deli. I have fodmap issues so I know why I struggle with nuts, cocoa, coffee and coconut, I have just been in denial LOL, okay being kinder... I have just been experimenting with their effect! And I can only have one cup of coffee a day anyway so cutting back means cutting out or reducing frequency. My experiment showed even just one cup on Saturday and Sunday messes me up so I will go back to just the occasional cup.... After I break the habit again. Remember why you stopped eating wheat/grains/sugar over a year ago? To get your health back. To stop being afraid of waking up with a swollen face and having to take steroids again. To stop the weakness from overtaking your body. To stop the unhealthy way you have thought about food all these years. To stop being out of control. to stop being dependent on someone to tell you what's wrong with you and they look at you and say I don't know, but you do need to lose some weight. You did it then, why did you think that adding back all the substitutes for wheat/grains/sugar would bring optimum health. It was a good thing, because you did go back to a healthier way of eating. And you lost 34 pounds. Doing Whole 30 I am finding that I don't really NEED all those flashy, shiny, fancy, junk foods or the substitutes thereof. I just need to eat to be healthy. In my life I have gone on different diets - and I thought a year ago I had found a way of life eating. I was still looking for the silver lining. Everyone else was/is - that substitute for brownies, cakes, pies - all those things that drew me back into eating to satisfy my inner desire for the taste of something sweet. The NEED to plug the hole in my inner most self. I have played games all my life with my health. The games became habit. I got lost in the effort to "eat healthy". Finding me. Who I am. Not my perception of who I am. BAD food or any food has been my sedative. DAY 8 Please don't feel you have to respond to any of this. Just reflecting. terryd Posted September 2, 2013 Author Share Posted September 2, 2013 Day 8 Meal 1 -- 2 eggs over easy veggies on the side Meal 2-- smoked sausage, kraut and veggies on the side about 6 grapes Meal 3-- grilled flank steak with grilled onions and peppers; roasted broccoli tossed in oil and sprinkled with garlic(lots) about a dozen grapes My daughter made a comment about me melting away. I'm not seeing that yet, but the swelling from all the gf foods maybe has gone.
