Is there any reason I can't always use olive oil all the time like I've been doing. Coconut oil sounds horrible to me and I can't mske myself buy it...I stood there looking at the variety at whole foods and walked away queasy lol. If coconut oil isn't appealing to you, other good fats for high heat cooking are clarified butter, duck fat, ghee, goat fat, lard and tallow. missmary Posted September 1, 2013 Share Posted September 1, 2013 olive oil oxidizes at high temperature, so it is best to use it for low heat cooking or salad dressings, etc. Animal fats (ghee, tallow, lard) and coconut oil are more stable at high heat.
