I made the olive oil mayo, ranch dressing, and avo dip last night and they were so delicious I knew I could do this! For breakfast today I had, about a palm and a half of leftover chicken (heated up with a little bit of ghee), half an avocado, and a whole peach. I know--no veggies--I'm just not sure I can wrap my head around having the veggies I had on hand for breakfast but I'm going to work on that. I had gastric banding surgery so my portions will probably always be a little smaller compared to some. I felt hungry after eating but I know that it takes a bit for my brain to catch up. How did I do?! For lunch, I planned to have a salad with veggies, chicken and HB egg with the yummy ranch! Link to comment Share on other sites More sharing options...

I made this eggplant recipe twice now for breakfast: http://www.cooks.com/rec/view/0,1850,144182-252192,00.html The second time I used garlic powder instead of real garlic (the real garlic made it a paste and was very messy! Adagio Posted July 16, 2012 Share Posted July 16, 2012 Today I dipped eggplant in egg and baked it on a baking sheet with spices. I topped it with crushed cashews. Delicious! RobinK Posted July 16, 2012 Share Posted July 16, 2012 I'm also not a veggies for breakfast kind of person, but I've been eating asparagus, zucchini, onions, and bell peppers with my eggs almost every day. That is an incredible idea and I bet even my munchkins would eat them! I don't do well with veg for breakfast (and I've been doing this for going on 2 years - not strict Whole30, just "paleo"). I stick with things I can eat raw - carrots, bell peppers, etc. I can also do broccoli (cooked) if I add a bit of citrus to them. It brightens them up and makes them feel more like morning, I guess. Bowlingirl Posted November 4, 2012 Share Posted November 4, 2012 I'm glad I'm not the only one who struggle with veggies for breakfast. Breakfast used to be my favorite meal and now, I dread it. I am at Day 13 and am allergic to tomatoes and can't stand sweet potatoes. I've gotten used to using coconut milk or going black for coffee. But unless I add vegetables to an omlete or frittata, which I can't face every day, my gag reflex goes into overdrive when I see veggies on my plate in the a.m. But I'm excited to try the sweet potato hash browns. Robin Strathdee Posted November 7, 2012 Share Posted November 7, 2012 What about cold veggies, like raw carrots and bell peppers or celery with a nut butter? I don't do well with veg at breakfast either, but those options work well for me. Or, a nice salad with a fruit and veg (strawberries and bell peppers are a face).
