Organic India Ghee

Any ghee is fine.

but on the shopping list under Cooking Fats Ghee (and clarified butter and animal fats) are asterisked with the asterix comment stating "must be pastured or 100% grass-fed and organic".

I do believe that to be be considered *best* choice, it should be. It follows the same guidelines as our meat recommendations. We don't explicitly restrict meats to pastured and organic, but we ask you to limit consumption of conventionally raised animal fat. So, in the same way, we ask you to choose high quality sources for your ghee.

The butter I use to clarify isn't certified organic, but it's from a regional Amish farm and I trust the health of the animals.
