LindaLee
I was thrilled when I found this at my local farmers market, because the ingredient did NOT include sugar, and I have been looking for something to supplement my never-enough carbs and have post-workout. The ingredient list is: Pumpkin, lemon juice, spices, and citric acid. But the nutritional data on the jar reports 6 grams of sugar in 1 tbsp. Pumpkin apparently has 2 grams in a cup, and lemon juice has 6 grams in a cup.
AmyS
Looks like the Amish got it right! How does it taste? (I ask, jealously...)
LindaLee
It tastes really good, which is why I'm suspicious, LOL...
amberino21
Has it been reduced/concentrated a lot? That could explain the different nutritional data
LindaLee
Good question, amberino...I'm not sure! Is there any way to tell?

LindaLee
Amberino, it's more like apple butter, if you've ever had that...which is kind of like apple sauce.
amberino21
Never had apple butter either...pretty sure we don't get it here! I've heard of it though
Maycat
What do you do with it?
Mom2A&M
I bet it is cooked down to concentrate the natural sugars, otherwise is would be thicker like canned pumpkin, right?! I wonder if you could make something like that...canned pumpkin, water, lemon juice boil and simmer......hmmmmm. It's got me thinking.
GFChris
What do you do with it? My husband and I used it on pork tenderloin this week. We chopped up two pears, added a few tablespoons of pumpkin butter in a small pan, and cooked for 4-5 minutes. It made an amazing topping for the sliced pork tenderloin on our plates.
