pistachio encrusted chicken

Just whipped this up for dinner tonight. Easy and tasty.


Amounts are approximate.


1 lb boneless skinlesss chicken breast, pounded to 1/4 - 1/2 inch thickness

1/2 c pistachio nuts, ground in coffee grinder

1/4 - 1/2 tsp garlic powder

salt and pepper to taste

1/2 c - 3/4 c paleo mayo


Mix the ground pistachios in a plate with the salt, pepper and garlic powder. Brush one side of chicken breast with paleo mayo. Dredge through pistachio mixture. Flip over chicken breast, brush with paleo mayo and dredge. Place chicken breast on baking sheet and bake at 375 degrees for 15 minutes or until done.


I used my Calphalon nonstick grill pan which did not require any further prep. Yum.
