So I am a college student who would really like to take on this 30-day healthy eating challenge to see if it can improve my health. I have a few problems, though: no stove or oven to cook in, only a fridge and microwave. now, i plan on getting eggs most mornings (and some kind of meat for the other meals) down at the dining hall, and i plan on keeping fresh veggies and fruits in my room, but i still am having problems trying to think of different meals i can have, without having a salad every day- or different ways i can prepare vegetables and fruits to make it more exciting. any ideas?
