juliejem Posted September 14, 2013 Share Posted September 14, 2013 It's that time of year, when pumpkin lattes start appearing everywhere. I just whipped this up and it is so delicious. I thought about putting some actual pumpkin in, but it's really just about the spices! 1 can coconut milk 2 tbsp coconut oil 1 organic egg 1 tsp vanilla extract 1 tbsp cinnamon 1/2 tsp ground nutmeg 1/2 tsp ground ginger Blitz in the blender until smooth and even. Play around with the spices to your liking. I also added in the tiniest drop of orange extract. I had to restrain myself from sipping the 1/4 cup left in the blender after I filled my Ball jar with it! Link to comment Share on other sites More sharing options...

juliejem Posted September 14, 2013 Author Share Posted September 14, 2013 Thanks, Chris, I wasn't thinking about the alcohol. Okay, then, scrape in half a vanilla bean instead of using the extract! The swypo aspect would depend on your "relationship" with coffee, right? I've never had an issue with flavored coffee, I usually just drink it black or with cream, I've always hated sweeteners in my coffee. But I've been having the coconut cream in my coffee in the mornings (same recipe minus the spices), and just adding a few spices doesn't fundamentally change that. Your last post makes me think you add the equivalent amount as if you were adding creamer. It sounds great! I need to get some vanilla bean! This whole30 thing has really brought me face to face with my relationship with food so I do stay away from the ones that send me reeling into my pathology. I'm curious though - what does the egg do? Isn't it about breaking old habits and establishing new healthy ones? Today instead of buying a cappuccino to drink while waiting on my kiddo to get out of school I made a vanilla chai tea, added some vanilla bean and coconut milk. It was lovely and frankly I wasn't even wishing it was a cap. So where do we draw the line as to what is SWYPO vs just enjoying something nice that is good for us? Why is this recipe so bad? Before I stopped having coffee half way through my whole 30, I was whizzing it up with coconut butter and coconut oil. it was certainly better than black! but, for some people, replacing their non-compliant creamy, sugar filled drink with a compliant version would likely see them continue with other habits that went along with the ritual. the whole 30 is about changing habits and reinforcing new, likely healthier ones and for some that means giving up certain things that may be tied to them making not so good choices.
