Nikknak
Tonight I'm going to make a creamy butternut squash and apple soup. It calls for the squash, apple, onion, 1/2 cup coconut milk veggie broth, and some spices. Will this be enough for dinner or should I make a protein to go with it? And if so, any suggestions? amberino21
You definitely need protein - 1-2 palm sized servings at every meal! You could add cooked shredded meat or ground meat, stir through eggs, or eat something on the side...
sheba-kitty
I have made a similar soup and always eat it as a side dish to my meat and green veggies. I also used it as a sauce over some lamb meatballs and spaghetti squash one time, yum!
Vian
Personally, that sounds like an awesome side dish for a porkchop topped with some sauteed onions and apples with a side of roasted broccoli or brussel sprouts, lovely fall meal! Delaine Ross
Or on the side of some hangar steak (I'm on a hangar steak kick these days...)
Bet
I used to make butternut squash soup (which to me tasted more like pumpkin pie!). I would freeze it and bring it to have for lunch each day. It seemed very filling, but I would be hungry 2-3 hours later. When I started W30, I started having more protein in my lunches and that hunger has not reappeared. So I agree, it's great as a side. BTW, you can also sprinkle some bacon on top. It's delish!!!! pjena
I add a chopped up compliant sausage/braut to my squash soup.
