You can tenderize meat with a marinade, any acid (lemon, lime, compliant vinegar and some olive oil). Not sure if this answers your question. If you post the recipe here, someone with more cooking knowledge than I have will probably be able to help you figure out an alternative way to tenderize the meat without adding that. Also, here's a link to an article that discusses different ways to make meat tender: http://www.pbs.org/food/fresh-tastes/tenderizing-meat/ ChickenNoodle -- it's a powder you buy in the spice aisle that supposedly tenderizes meat as part of a dry rub. It's very salty and doesn't do much for the flavor of things, in my opinion, but my mom used to always sprinkle it on beef (roast, steaks, anything other than ground beef).
