I read about how 24 hour fermented yogurt can be a good source of probiotics, and we love yogurt, so it would be great if we could eat that (post whole30 of course). I have been looking at yogurt makers and most of them only incubate them for like 8-12 hours. Is that okay? Or do I need to do it without a yogurt maker if I really want the 24 hour process? Roz Griffiths Posted September 30, 2013 Share Posted September 30, 2013 I've heard a slow cooker can be quite useful for yogurt making... *consults "Fermented" book* says here that basic yogurt - dairy or coconut milk - needs 8-12 hours in a yogurt maker, food dehydrator or slow cooker set to warm. Mesophilic yogurt takes 12-48 hours in a warm spot (70-78°F), & needs a specific mesophilic yogurt starter. It doesn't say if one type is better than another though. Hope that helps! ABS32013 Posted September 30, 2013 Share Posted September 30, 2013 I have a yogurt maker that has been collecting dust for a while, which I think goes as high as 14 or 16 hours. I think I'm going to try the coconut milk yogurt in Against All Grain (Danielle Walker) soon. It has a longer incubation period, but I figured that when I got up in the morning (after starting it the night before), I could just hit the button a few times to add extra hours. The pilot light (assuming it's a gas oven...) will keep it a little warmer in there than on the counter. It's been ages since I've made yogurt. I also opted to buy the higher dome and a bigger glass jar. Good luck. Every once in a while I consider dusting it off and trying to make yogurt out of coconut milk.
