lizzie_s
I can't find canned sweet potato or yam to use in the salmon cakes. Even Whole Foods only has them in heavy syrup. Last time I ended up using organic baby food, but the consistency is very thin. Anyone have any ideas on where to find the things or what to substitute? Thanks! Roz Griffiths
I cook whole, unpeeled sweet potatoes in my pressure cooker - 15 minutes with just a little water. The skins just fall off & they're really soft. I guess you could bake them in the oven or microwave too?
vkanders
I make mine in the microwave, and then puree in my food processor. A blender could do the same. If you don't have either, you could just mash very well with a mixer. If none of those work, maybe canned pumpkin is an option?

My Whole Foods carries Farmer's Market brand Organic Sweet Potato Puree in a can. One ingredient: sweet potato. I've used it many a time to make salmon cakes. amberino21
we don't get canned sweet potato or pumpkin here...except maybe in a few specialist shops that carry imported delicacies like pop tarts and marshmallow fluff, and goober grape (? is that the name...PB and jelly striped in the same jar?). i'd just cook my own - if I want puree I usually steam my vegies. MrsStick
I used to LOVE GOOBER GRAPE!!! Seriously. My sister and I were obsessed. I had some a few years ago and it was awful. Go figure - tastes certainly change.

KathyV
does anyone eat the skin on their cooked sweet potato? Or is that a no no, cause I LOVE them! But I will back down if it is a no go.
amberino21
I usually eat the skin - we buy organic, so I don't peel them. there's lots of goodness in the skin, and plenty of fibre

lizzie_s
I went back to a different Whole Foods and found shelf full of what I was looking for. Hooray! Thanks for all the suggestions, though. Now I know how to substitute if I have trouble in the future. Aren't sweet potatoes great? I never used to like them much, now I'm addicted. I'm unclear about organic vs non-organic, though. They are actually on EWG's "clean 15" list, but I've also read that one should use organic only. I'm just trying to save a little money where I can, so focus my organic buying on the worst offenders.

I buy as much as possible organic - things I peel, or things with thick skin that gets cut off I generally buy non-organic if there's a huge price difference. If I bought non-organic sweet potatoes I'd peel them as any pesticides would likely be on the skin.
