You can soak canned beets in a solution of half apple cider vinegar and half apple cider for a day to pickle them. You might want to add some spice like garlic, salt, and cayenne pepper. If you are not currently on a W30 then goat cheese is also a great addition. If you are W30ing it then you can make a nut cheese like this http://urbanposer.blogspot.com/2011/11/dairy-free-cashew-ricotta-cheese-gaps.html . Slice up those beets, dollop the cheese over top, zest some lemon or orange over top and drizzle with good quality olive oil. Serve over mixed greens, so good! ErinL Posted December 9, 2013 Share Posted December 9, 2013 We love them. A lot of the time I cook them, then chop and pour over a vinaigrette of olive oil and red wine vinegar. A little salt, pepper and dill rounds it out. You can serve them warm or cold. They are wonderful as is, but are also good over a salad! I LOVE beets!!! They are also yummy roasted! Just Real Food Posted December 23, 2013 Share Posted December 23, 2013 It's coming up for Christmas here down in New Zealand and it's summer. So the beets are available fresh. Yesterday I made this lovely festive salad and cooked the beets and other vegetables first.
