Cooked beets

I like them pickled. You can soak canned beets in a solution of half apple cider vinegar and half apple cider for a day to pickle them. You might want to add some spice like garlic, salt, and cayenne pepper. You could pickle some sliced onions at the same time to prepare a cold beet and onions slaw.

they are fabulous sliced with walnuts or pecans, red onion, and balsamic.  If you are not currently on a W30 then goat cheese is also a great addition.  If you are W30ing it then you can make a nut cheese like this http://urbanposer.blogspot.com/2011/11/dairy-free-cashew-ricotta-cheese-gaps.html . Slice up those beets, dollop the cheese over top, zest some lemon or orange over top and drizzle with good quality olive oil.  Serve over mixed greens, so good!

We love them. A lot of the time I cook them, then chop and pour over a vinaigrette of olive oil and red wine vinegar. A little salt, pepper and dill rounds it out. You can serve them warm or cold. They are wonderful as is, but are also good over a salad! I LOVE beets!!! They are also yummy roasted! I even found a recipe for beet "hummus" with walnuts. I will be trying that soon.

It's coming up for Christmas here down in New Zealand and it's summer. So the beets are available fresh.

 

Yesterday I made this lovely festive salad and cooked the beets and other vegetables first. Maybe you could use your beets for something like this?
