I feel wonderful, knee pain is gone, energy is up and I can already feel a difference in my clothes! Saturday we spent the day at Lake Tahoe with some friends and there was a potluck. I am happy to say that I didn't eat anything but the fruit, veggies and grilled beef. We are in the process of finding a house, working on my teaching degree and life is really busy, yet I haven't felt the need to stress eat like I would have before. I used to drink coffee with Splenda and creamer in the morning and Diet Coke all day long, now I just have a cup or two of black coffee and water the rest of the day. I can't believe how easily I was able to get rid of those bad habits. Here is a typical day for me: 2 free range eggs scrambled with bell pepper, zucchini, onion, spinach and heirloom tomatoes. Sometimes I add a little leftover grass fed top sirloin. I use a little less than a tablespoon of olive oil. For lunch I usually have homemade turkey taco meat with homemade seasoning on mixed lettuce leaves. I add 1/2 an avocado, olives, tomatoes and bell peppers. For dressing I drizzle a little red wine vinegar. Dinner I have been trying some of the chicken recipes. The tarragon cream was a big hit! I cool two veggies to go along with such as broccoli and carrots and sometimes some mixed greens with vinegar for dressing. The not weighing is killing me but determined to not give in.
