GLC1968 Posted January 23, 2014 Share Posted January 23, 2014 I haven't done it with pork bellies specifically, but I did buy a 5 lb package of pork fat from my CSA (where I get my well-treated pork and grass-fed beef). I rendered it down to lard and I use it all the time. It's not as 'bacony' as the fat I save from the bacon, so I can use it in more taste-sensitive recipes/foods. It's great! Just make certain your pork is from a reliable source (not factory farm), of course. I really wanted to do it with the beef fat to make tallow, but my CSA sells all it's beef fat to a local company (I'm not sure who or why...but I can't help but wonder if it's not 'Fat Works' since they are located here).
