Faith's Whole 30 Journey

I started my Whole 30 this past Sunday, July 22nd. I think it will help me if I keep a log of my progress. I have never really written in forums before so this is new to me; I was always afraid before. I am not sure what is different now but I am really enjoying the Whole 30 Forums.

I am overweight, diabetic, and have high blood pressure. Last fall I began really changing the way I eat and my lifestyle. So, the Whole 30 is a progression of this process. I am totally convinced that grains and sugar are a major factor in my obesity and diabetes, combined with a sedentary lifestyle. My first step was to go gluten-free last September, which opened up a new world to me. I was amazed at the physical changes that occurred as a result. I started losing weight. I had some problems with neuropathy in my feet that went away. My blood pressure went down, my blood sugar level decreased, my cholesterol improved, and overall I have felt better.

I am on day 6 of the Whole 30 and I can see further improvement already. I am betting that I will be able to get off my diabetes medication soon because my blood sugar continues to improve. My blood pressure is lower than it has been in years. I had all my blood work done before I began the Whole 30. So, I will be able to see the results when I am through. I am also monitoring my blood pressure and glucose daily. My doctors are happy with all my results over the last year and are supporting my Whole 30 journey.

I am having a blast cooking. My favorite website is www.thefoodee.com. I have made Cumin Spiced Tilapia, Avocado Burgers, and Chicken and Kale Curry. I also use recipes from Paleo Comfort Food Cookbook, which I love. Try the Egg Muffins, they are awesome.

Day 6 and doing great! I love the Whole 30! :rolleyes: The only thing I really miss is my coffee creamer.

Woot! I made it to Day 7.

I feel great today. I have more energy than I have had in years. I have been puttering around the house and just cannot find enough to do. I am truly shocked by my energy level and how good I feel. I did not even miss my coffee creamer today - miracle.

Last night we had pork carnitas, broccoli, and jicama for dinner. We have never had jicama before and it was delicious. First you have to cook it in the crock pot to prepare it for cooking. We used a recipe out of the Well Fed cookbook. It turned out awesome and I have to say that I am a fan.

I am going to try some more new recipes this week and I will let you know how they go. I am using a few off the Foodee website again. I am planning on Supreme Egg Loaf, Salisbury Steak, and Roasted Chicken.

My blood pressure and blood sugar were both great today. Blood pressure was 117/61 - the best it has been in ages. My blood sugar was 117 after breakfast, which is awesome.

Day 8 and still feeling great. I don't know how to explain it except that I have a feeling of clearness or like I have come out of a fog. Can anyone else relate to that? It is like everything is crisper. I cannot believe that I have gone a week without dairy, grains, or sugar.

Last night we had pork meatballs with cabbage from the Well Fed Cookbook. They were very yummy. I also made the Super Breakfast Loaf this morning from www.thefoodee.com. We really enjoyed it. You serve it with marinara sauce. It has Italian sausage - we took ground pork and added an Italian blend seasoning we made up from the Well Fed Cookbook. I then sauteed onions, bell peppers, mushrooms, and zucchini with garlic and added it all to a dozen eggs with sliced black olives. It makes a 13 x 9 pan so we can eat on it all week.

My significant other made mayo for the first time this morning from It Starts with Food. It turned out great. We are so excited that we are gong to have mayo now!

My blood sugar was great today again 124 after eating breakfast. Blood pressure was good too at 117/56.

Day 9 - Keeping on Keeping on! Still doing great. Had a few cravings last night probably because I had the Olympics on and of course those darn commercials always get you! However, the good news is that I did not follow through. Blood sugar and pressure still looking good - no major changes.

Last night we had chili for dinner with avocado - yum!

Not much to say today. Going to try making the salmon cakes and tartar sauce tonight out of It Starts with Food. Will let you know how it goes.

Day 10 - One third of the way through!

Last night I made salmon cakes from ISWF and the tartar sauce. The salmon cakes were good but the tartar sauce was to die for. We have really been enjoying the Supreme Egg Loaf I made the other day for breakfast, it goes a long way. We have had it for three days and still have quite a bit left. It is so good with the marinara sauce and really filling. Today will be all left overs. I am going to use left over chicken to make chicken salad for lunch and we will have salmon cakes for dinner tonight.

Last night my feet were really bothering me, they are better this morning. Other than that I am doing well and I did not have any cravings yesterday.

I think I may have found a substitute for my coffee. We picked up some Red Bush tea from the local tea store this weekend. I made some this morning and I liked it so much I made another cup. I am not feeling a need for coffee today. I have to say I like the tea much better plain than I do coffee. We did try the cold brew and it is much better than regular brewed.

Oh blood sugar is still good was 119 after breakfast this morning. Blood pressure was 117/56, which is also great.

Day 11 - Feeling tired.

I am feeling really tired today. Last night we had steak, sweet potato medallions, and brussels for dinner. I could not eat all of it because my throat started hurting, almost felt glandular. Not sure what is up with that. It is a little better today. My blood sugar and blood pressure are still good.

I made a great lunch yesterday of veggies and left over chicken. I made boats out of Romaine lettuce and chopped up the chicken to go inside. Then I made Ranch Dressing from ISWF - it is wonderful stuff. Anyway I put that on the chicken boats and then filled the rest of our plates with fresh raw veggies. I added a few olives. It was really good.

Hey Faith, I hope you are feeling less tired soon! I'm trying the supreme egg loaf recipe you posted!! I figure that will save us some time in the mornings... all of your meals sound so yummy!!

Hi Lola,

Thanks. I think I figured out the reason - I have a bug (sore throat, tired). I know I will be better soon. That supreme egg loaf is really yummy - we ate the last of it this morning. I think it has become a favorite.

Day 12! I am so proud of myself for eating completely clean for this long and it really has not been that hard. I have been feeling completely satisfied with my food and am not hungry. As I said above i have a bug but other than that all is well.

I like this cold brew coffee so much I just might be able to give up the cream. Amazing!

Yesterday was straight leftovers. Supreme Egg Loaf for breakfast, left over steak with brussels & sweet potatoes for lunch, and salmon cakes and coleslaw for supper. The coleslaw was the only new thing. Everything was just as good or better than the first time. The salmon cakes were actually better as leftovers. I recommend the recipe. It is a little work getting the bones out but it is worth it. I figure I will get better as I work with it more.

Blood sugar was even lower this morning at 113 and blood pressure was down too at 113/59. My plan is to get off all my medication. I am a type 2 diabetic. The doctor has already taken me off my cholesterol medication because my levels are so much better,

I am feeling really good about the future!

Day 13! Awesomeness! :rolleyes:

I feel great today. One thing that I have noticed is that my appetite has decreased quite a bit. I am listening to my body and what it wants so much better. I am finding that I am pushing away from the table when I am full instead of waiting until I am stuffed. It also is taking a lot less to fill me up. I have not snacked at all. None of the grazing I used to do throughout the day because I simply do not want it. This is completely new for me. I get hungry close to meal time and my stomach is actually growling - I am actually hungry.

Yesterday for breakfast we ate the last of the supreme egg loaf with some cantaloupe. For lunch I made egg salad and lots of fresh veggies. For dinner we had pork chops, broccoli, and cherries. It was all yummy. We used the homemade mayo from ISWF for the egg salad.

I have gotten over the bug I had. My throat is still slightly sore but almost gone. Other than that I feel great today. We finished cleaning out the pantry of everything non-paleo. Things that we know we will never use again. This is the first time I have ever done that when it didn't make me extremely anxious.

Blood sugar and blood pressure are still doing great.

Day 14 and going strong. Feeling good today!

Yesterday we had a veggie scramble for breakfast using leftovers and adding onions, mushrooms, and green peppers. For lunch we had BLTs - we used romaine lettuce, diced up tomato, and bacon with home made mayo. It was so good we had extra veggies on the side. We took the romaine leaves and spread a little mayo on them, laid a piece of bacon in the center, added the diced tomatoes - it was like a BLT Boat (lol).

Dinner was absolutely yummy! I made Everyday Paleo Salisbury Steak from www.thefoodee.com. It was absolutely delicious. We had brussels on the side. I think this would have been great with mashed sweet potatoes or mashed cauliflower.

I think I am a convert to cold brew coffee for good. I am drinking it black and it is really smooth. All the normal bitterness goes out with cold brewing.

My blood pressure was awesome today - 107/57. This is the best it has been in I cannot tell you how long.

Good for you Faith... It sounds like all is still going well for you. I'm glad to hear that you're feeling better too.

I had to google this cold brew coffee you speak of!! I've been brewing my coffee, and drinking it with coconut milk(very yummy!). Now I'm going to have to try the cold brew.... I'll let you know how it goes...

Day 15! Woohoo - half-way there! At least on the Whole 30 but I am sticking with the August group so not really half-way done.

Thanks for the support Lola. I read that you tried the coffee and did not like it. I am going to try it with coconut milk, I had tried that with regular coffee and did not like it. Did you notice that the cold brew was a smoother blend though?

Okay so yesterday was crazy busy. I am in school and I was overwhelmed with homework. I am working on my life long dream of becoming a therapist. I have so much change happening in my life and it feels great.

Let's see for breakfast yesterday we were running really low on everything because we needed to go to farmer's market, which is Saturday. Anyway, I made some eggs and I made fried bananas - they were yummy. You just slice them and put them in very hot clarified butter, turn them over cook a few more minutes and pull them out. I then sprinkled cinnamon and chopped pecans on them. OMG - they are to die for.

For lunch we leftover Salisbury Steak and a bunch of fresh veggies. For dinner we had thin breakfast steaks, green beans with garlic, and a half a peach. Peaches are in season here and they are fabulous.

Feeling good. Took a break today from monitoring blood sugar and blood pressure.

Now I have to go buy some bananas! Yes, I did find the cold brew coffee was a much smoother taste, especially with the coconut milk.. My husband totally turned up his nose at the whole thing!

So another thing we have in common - I'm going back to school as well. This summer I've immersed myself back into French before my program starts in September! Change seems to be my middle name at the moment.. and I'm loving it!

Anyway, thanks for all the great meal ideas, I love reading your posts... tonight I'm making coleslaw..

Day 16! I feel so awesome! I feel light and very clear headed. I am noticing so many great changes in myself.

Right before I started the Whole 30 i had my bi-yearly lab tests done that I have to do because I am diabetic. My fasting blood sugar was 135, this morning my fasting blood sugar was 105!!! Can you believe that. At that time my blood pressure was 144/78 today it was 105/54. I am in total amazement. My blood pressure has not been over 120/60 for the last two weeks. If this is not a testament to Whole 30, I do not know what is.

Thanks Lola for your kind words! So you are a student too. I am loving school. I am glad you like the coffee. Yesterday I tried it with cold for the first time with coconut milk, cinnamon, and nutmeg - it was yummy. I drink it hot every morning. I try to make sure I do not have any after 12:00 p.m. I have succeeded most days, I think I have only had it twice in the afternoon since I started Whole 30.

Yesterday I made the Spinach and Cauliflower Egg Casserole from www.thefoodee.com I did add onion powder and mushrooms but otherwise followed the recipe. It is good and I really like the spinach with the egg but I think that next time I will leave out the cauliflower and add other vegetables and more eggs. For lunch I made a salad with all kinds of veggies and topped it with roasted chicken and ranch dressing from ISWF. For dinner we had more roasted chicken, asparagus, and a bowl of berries with coconut flakes and cinnamon.

YAY Faith!! Good for you, and your improving health!! I would say that it is definitely a true testament that The Whole30 is the way to go. I agree with Lizzy, I enjoy following your journey, and I hope too that Lizzy experiences great successes right along with you!!

Day 17 and going strong! Good grief last night, just for the heck of it I checked my blood sugar after dinner - 87 unbelievable! Now I know I will be able to get off these meds soon! Woot! This morning my blood sugar and pressure are right at yesterday's. I can tell I am losing weight because my clothes are getting looser.

Yesterday for breakfast we had the spinach casserole and a grapefruit. I should have added some protein to it because I was hungry by 10:00 a.m. which is unusual. The spinach loaf does not have as much protein as the other casseroles. For lunch I made salads and we had the rest of the Salisbury steaks, that recipe goes a long way. For dinner we had organic beef franks and broccoli. I also made Johnny M's Sweet Potato Fritters - they were absolutely delicious. I recommend them highly. I found that an easy way to put them in the pan is to use a 1/4 cup measure and put them in and then smash them with the spatula. It is alot easier than trying to make patties. I am going to try them several different ways like folks suggested. Hi website has some great recipes; it is www.eatingforidiots.com Check it out.

Day 18! :)

Lola - LOL :lol: - I am glad! My SO made BBQ sauce last night too! The whole house smelt like it, We are having it with ribs today. We will have to compare. We got the recipe from ISWF.

Blood sugar was 108 again this morning with a blood pressure of 105/60.

Yesterday was a good day! We had the spinach casserole for breakfast again, but added an organic beef frank to it to extend the protein and had a peach. For lunch I made big chicken salad with lots of veggies. I just ordered larger salad bowls because ours are not big enough. I also made the Dreamy Avocado Dressing to go on top of it - yummy! For dinner I made my own recipe of Lime Garlic Tilapia, which turned out great. We had spinach and left over sweet potato fritters to go with it. It was a great dinner.

I continue to be amazed that I have managed to maintain this lifestyle change. I have not eaten one thing that is not Whole 30 and the honest truth is I have not wanted to. I feel like I have finally figured out the big SECRET :ph34r: to losing weight and becoming healthy. All those years I thought it was just me and that I had a weak will power. Now I honestly believe that part of it was a true addiction to carbs and sugar. I have noticed other changes as well. I have never really had a problem with sleeping but I am sleeping longer and I do not wake up at all during the night. I have also noticed that my night sweats have gone away. My skin is looking great. I have been in this perpetual good mood for days now. All I can say TAWANDA!!! (reference Fried Green Tomatoes) I guess that boundless energy is kicking in!! :P

I hope everyone has a FANTASTIC day and feels as good as I do.

Keep up your excellent work, and your unrelenting optimism Faith.. I think it's hilarious how insync you and I seem to be with our W30's.. I like it! I hope you enjoy the BBQ sauce as much as we did.. I wish we enjoyed it with ribs though... I think I'm going to have to make some soon, maybe this weekend...
