What I had for dinner last night

Yes, I'm one of _those_ people.  You know, make dinner, arrange on a plate, take a picture and post it on Facebook.  That way, I get to talk about it longer.....

 

So last night this is what we had for dinner:

 

Grassfed filet from one of our steers.  Sweet potato with ghee.  Local hydroponic lettuce with olive oil and vinegar, toasted sliced almonds and a hard boiled egg from one of our hens.  I kind of feel sorry for non-whole30 people.

 

And yes, I devoured it.   Then I fed the sweet potato skin to my hens.

Spatchcocked roasted organic chicken, lettuce tossed in olive oil and vinegar and zoodles.  Smeared ghee all over the chicken, salted and peppered it before putting in the oven.  Skin was crisy and salty!  Yum!

 

This was my first attempt at zoodles and will definately try them again!

I made the "Braised Beef Shanks with Coconut Milk, Ginger and Cumin" from Mark Sissons Primal Blueprint cookbook.  You gotta try it.  Beef shanks are a cheaper cut and one you can afford when buying grassfed.  The marrow from the bone ends up in the braising liquid.  We defatted the braising liquid and then used it as a sauce over cauliflower rice.

 

Soooo yummy!
