Kale and pomegranate

One of the recipes I enjoyed this week was a big bag of kale sauted in som coconut oil and then simmered I. Coconut milk until the sauce reduced. I added some salt and pepper, but no other spices. Then I turned off the heat and added a container of pomegranate seeds from trader joes. It was beautiful contrasting colors and completely delicious!
