I'm sure I will be commenting more than once ;-) I made this from your recipe a week ago and I agree, SUPER delicious and easy. The aroma in the house itself is worth cooking. Well Fed Chocolate Chili is a good one too. Easy for a busy Sunday afternoon of meal prepping. I made it for my mom and she loved it. I just made this last night and even my boyfriend said it was his favorite Whole30 meal I've cooked so far! I served over cauliflower mash instead of rice. Yesterday was our last day of reintro so we were incorporating gluten all day, and I complete forgot to serve the sourdough bread with this meal because everything else was so delicious. She bought some organic boneless chicken thighs, chopped up some fresh cilantro, and put it in a big skillet with coconut oil. Then she squeezed a fresh lime all over the chicken when it was cooking. What made it so good was that she cooked the thighs to the point that they got a crispy coating in places...so good and so simple. I actually prefer this over chicken breast I think...the fat really tastes good and the thighs are very moist. I did a bad thing when helping her clean, used the spatula to scrape the little bit of burned greasy chicken thigh meat that was stuck to the pan..ate it, and I didn't feel guilty at all! Even my husband agrees, and his diet is nowhere near Whole30! Here are my favorites: Breakfast: Smoked Salmon, Spinach and Avocado Scramble atop Sweet Potato Hash AND Orange Coconut Omelette (so simple but I just love it!) Dinner: Spaghetti Squash in a Creamy Avocado Pesto Sauce with Smoked Salmon and Asparagus, Pastelon AND Plantain Nachos from Well Fed 2 with Chocolate Chili, homemade guac and salsa! I roast a chicken every week, save the skin and recrisp it when ready to eat, make broth with the carcass, and use the meat throughout the week for various things, sometimes salad, sometimes soup.
