NatalieBA
I go to heat up my delicious beef and sweet potato curry for lunch and realized I brought a container full of sauteed eggplant instead. I also have coleslaw w/ avocado and balsamic dressing and an orange but no protein. Obviously I'm just going to suck it up and eat it and not have any protein with lunch. I did have 1 boiled egg pre lunchtime workout. Just a friendly warning to my fellow Whole-30 friends...always double check what's in the container before you pack it! NatalieBA
Ugh - to add to the insult the eggplant I cooked last night tastes awful, like mushy. It may have been over ripe or i cooked too long. I've never done it like this before.
Lola24
I hope you have a fabulous dinner planned. Then you'll forget about the lunch fail.
runninglawyer88
I don't think eggplant has any chance at staying even reasonably crisp...I don't think you did anything wrong. It just isn't a vegetable that reheats well.
NatalieBA
Ok, good to know about eggplant. In the past I use it to either make baba ganesh or blend it up in a tomato sauce. Those ways it keeps better!
