maryannet 12
I shred one sweet potato into this breakfast casserole that I'm addicted to. The entire casserole lasts me 6 days, so I'm basically having a sixth of a sweet potato daily. I've had one entire sweet 'tato after a long (for me) run, but I will probably only have a whole one on those types of days (i.e. once a week). What is the breakfast casserole recipe...it sounds like a grab and go breakfast...or quick one. I need some variety there. thanks mary anne nevermind I found the link you posted...so trying this:-)

eeevans3 11
Anybody know if it's better eat the skins or peel them? My sister and I are debating and not sure if it matters with sweet potatoes?
Laura B 381
I always eat the skins, I think some of the fibers is in them. My boyfriend doesn't really like the skins, so I think it's just a matter of personal preference. I generally eat any edible part of veggies, though.
