Robin Strathdee Posted March 23, 2014 Share Posted March 23, 2014 We're okay with it as long as the oils are compliant. Here's the thing though: it's all fat, so think of it as that part of the meal. More a condiment or a garnish than an actual portion. Also, consider the source of the pork fat and skin. Factory farmed pigs are among the most mistreated and least healthy animals in the commercial agriculture system and that makes them inherently less healthy to consume.
