missmary Posted April 3, 2014 Share Posted April 3, 2014 eggs keep for a very long time. even longer if they are mixed with acid, as in mayo. If you are worried, mark down the expiration date from the eggs you used, and use the mayo up before that date: likely several weeks or more from when you make it.
