JeninOr Posted April 12, 2014 Share Posted April 12, 2014 This is pretty cool. So glad I can do this here and maybe be a help to others. I started 4/1/14. Today is Day 11. I splurged a little bit right before my W30 with dairy. Had a milkshake and some homemade enchiladas with cheese. Felt symptom for about a week (at least the one symptom that I know of from eating dairy), but there could be other symptoms that I'm not aware of. But, that was 12 days ago. As for my W30, I slipped on day 5 just a bit, but got right back on track. My typical breakfasts are seasoned meat or eggs with some sweet potato, spinach, onion, or some combination of those. My typical lunch is similar to dinner. Could be leftovers of something I fixed for another meal. Cooked or raw sugar snap peas, broccoli, spinach, cucumber, carrot, onion, celery, either cooked or in a salad with chicken on the side. My fat is nearly always coconut oil, sometimes olive oil. Avocados are also an option but they go quick in our house so I don't always have some on hand. I sometimes will eat a piece of fruit with breakfast or dinner. I don't eat legumes that often generally, so leaving them out for this diet wasn't hard. Avoiding rice and sweets was the hard part. I've been having a LOT of gas the last few days. It can take a while so be patient. If you are eating according to the meal planning template http://whole30.com/downloads/whole30-meal-planning.pdf, taking digestive enzymes and drinking 1/2 your weight in oz of water per day then you are doing the best you can. JeninOr Posted April 12, 2014 Author Share Posted April 12, 2014 Thanks for the tips friends! I need to find a digestive enzyme that I can take (multiple food intolerances), and up my water for sure. I don't eat a lot of raw veggies, but that is something else good to think about. I think the hard part for me is cooking for the rest of my family something that they will enjoy, but also something that is compliant for me. Cooking 2 different meals just isn't always an option. JeninOr Posted April 15, 2014 Author Share Posted April 15, 2014 I made some amazing "tortilla" soup tonight for dinner. Saved in on Stalkerville AND pinned it. I do NOT want to lose it! So good! My first time using canned jalapenos (never have used fresh), and I am so glad I took the risk! Spicy is not my forte. I've got a FULL, FULL fridge with left overs and lots of veggies. I had eggs over some left over pesto cauliflower "rice" for M1, M2 was a repeat of yesterday which was chicken and green beans with a Thai curry/coconut milk sauce and M3 was a quazi-teriyaki chicken with pineapple and broccoli. Hubby said it would make a great pizza topping once I'm eating grains again. Starting to think about Easter food...better late than never. I'm not tempted much to cheat much on this diet which is good. And it's only in re: sweets and my gf bread. M2-chicken tenderloins with coconut aminos and a bit of almond butter for sauce and a big salad with spinach and cucumber. M3-W30 meatloaf, seasoned green beans and a plain roasted yam. A few days ago I got tired of cooking a whole meal that was W30 compliant to feed my family of 4. So, I am fixing two meals, one for them, and one for me. However, the one for me has lasted 3 days, so really I only have to cook a new entree for me once every 2-3 days. I think that will be ok for the rest of the month. I am loving stalkerville's recipe search engine for finding new recipes, too. I really miss an occasional dessert and Chinese food. Today I slept in a bit and had a late breakfast. Resultingly my blood sugar level has been on the low side most of the day. I should have eaten a piece of fruit with breakfast, I guess. FYI I'm hypoglycemic..... The rest of the family had coleslaw, baked beans, and dirty rice along with it, but I did NOT feel like I was missing out on anything. JeninOr Posted April 23, 2014 Author Share Posted April 23, 2014 My back has been hurting the last 3 days and makes it really hard to get up in the morning. It only has been hurting at night and in the morning, but once I get up and about it settles down. Didn't get quite enough sleep last night. Really thirsty all the time and need to drink more water! I'm only drinking maybe 36-48 oz per day and it is just not enough. I'm so happy on this diet though. My brain has been less foggy and I'm getting more done. I'm really looking forward to this diet being over, but I love what I have accomplished these last 3 weeks and what I've learned about cooking and my body. So rewarding. I had a hamburger patty seasoned a little bit like pork sausage with some asparagus for M1. Still feeling like I will go back to old ways once the 30 days is over, so I might extend a little longer. Partially because the days have been hectic and I haven't planned out my meals. BUT today is day 30 and I am so happy with what I have learned about cooking this month. That website has been SO helpful in giving my delicious recipes to try. Tonight we had paleo zucchini boats. The kids preferred their filling over rice, but they still got some zucchini from what I scraped out to make the boats. I think a combination of Spring, the weather here in the PNW which has gotten me outside more, and the diet have really gotten me on a positive path for my health. I would not have traded this month for anything, even though it was over Easter! Now I'm off to scour the re-intro boards for more help and insight!
