amijoy Posted April 13, 2014 Share Posted April 13, 2014 Hi there, I began my first Whole30 journey this morning. I'm a 22 year old college student looking to regain my health. I've been primal for a couple years but have been slipping up a lot lately. My biggest weakness was all the comfort food my family brought me after a recent surgery to repair a broken wrist. All that sugar combined with less exercise than normal has really affected my overall wellbeing. I'm really looking forward to using this Whole30 challenge to get back on track and kick start a healthy summer. Meal 1 is done. I threw together some eggs, carrots, celery, mushroom, and spinach in a scramble while my family ate pancakes and bacon. The scramble didn't taste as good a it looked so i'll be looking for some good breakfast ideas to try these next few weeks. I don't usually eat breakfast so this will be a bit of a challenge for me. GFChris Posted April 13, 2014 Share Posted April 13, 2014 Welcome! Start by thinking of breakfast as "meal 1," and that opens up a whole host of options. Leftovers from previous meal, soups, chilis, meatloaf, whatever you want to make. Ideally, look for each meal to fit the recommended meal template. Search the forum for previous discussions on meal ideas. I find it's easiest to search the forum via Google. tahoecorgilover Posted April 13, 2014 Share Posted April 13, 2014 Amijoy, Sounds like you are off to a good start! I just finished a scramble too. It's my favorite so far. Hamburger, 2 eggs, sweet potato (a few slices) and a side of swiss chard. Backing off the nuts so included 4 olives. I've found that using coconut oil on the pan before cooking the scramble really makes cleanup easy! I've found ghee as a result of this Whole 30 (my first) and love it! I'm going to try some new recipes this week. I'm not a good cook by any stretch of the imagination but I want to try some new things. I'm going to try making the mayo recipe this week. If I can nail that one I can try lots of new stuff. I ordered a stick blender through Amazon and it should be coming in a few days. Might even dust off my slow cooker and try some of those recipes. I think I will try adding sweet potatoes to the eggs tomorrow, that sounds delicious! I also stocked up on avocado to go on top, that will already make the eggs better. Laura I did the same thing today, tried stocking up on meat. I wish I could find some jerky without sugar. I ended up buying some chicken, liver, and ground beef to cook in bulk and eat throughout the week. Day 1 is done. Lunch and dinner were better than breakfast and I got through the day with very minimal snacking (had some strawberries before lunch and an orange while hiking).
