almondjoyless
I've been shredding them raw, right after peeling. Unfortunately I've also been shredding my knuckles. (Human skin is Whole30 approved, right?) When you want to shred sweet potatoes for a recipe, do you bake them first, or do something else to make them a little more... compliant? GFChris
Do you have a food processor with a shredder blade? That's how I shred my sweet potatoes (also raw, after peeling).
snowflower
I have this glove http://www.surlatable.com/product/PRO-51854/Mesh+Cut-Resistant+Glove I use it when I use the grater and the mandoline. You still need to be careful, but it helps for the little slips.
Bet
I also use a food processor with a shredder blade. I don't peel my sweet potatoes, but I wash them throughly.
almondjoyless
No food processor. Not ideal, but we're short on appliance space.
jillian
I hear you. I have a small kitchen. However, making room for a food processor has been a lifesaver (knucklesaver?). I put off getting a food processor for quite some time and finally gave in about 6 months ago. I use it ALL. THE. TIME. It's great. I shred 4 giant sweet potatoes at a time and store the shredded potato in the fridge. Almost every time I make a meal, I toss a generous handful of shredded sweet potato into a pan. I swear I paid less than $100 - but here's the one I got from amazon: http://www.amazon.com/gp/product/B00005OAZ3/ref=wms_ohs_product?ie=UTF8&psc=
