Grab and Go Breakfast Idea

Basically egg salad eaten in a seeded halved bell pepper.  Great for eating in the car between the gym and work. 

 

Ingredients:

3 hard boiled eggs, chopped (i.e. I use a pastry cutter right in the mixing bowl)

1 small baked potato, roasted then diced

2 tbsp homemade mayo

4-5 celery stalks, chopped

salt

pepper

paprika

cayenne pepper

 

Mix all ingredients.  Season to taste.  Stuff in two halves bell peppers.  Tupperware it up for easy grabbing in the am on your way to the gym!
