Different kinds of dairy may have different effects on you, so my primary goal would be to test whatever kind of dairy you hope to consume in the future. Some people find they can tolerate heavy cream but not 2% milk or half-and-half. Some people do ok with hard cheeses and not soft, or goats milk but not cow, that sort of thing. If you are trying to figure out what kinds of dairy are healthiest, the general wisdom in the paleo community is to go with high-fat dairy if you can tolerate it. Now is your chance to find out.
