The Start To a New Me!!!

Day 1 --

 

Hey everyone :)   My name is Kerri and I've been struggling with my weight for years.  It became my worst enemy since moving over to Europe, 10 years ago this summer, and now the culprit needs to hit the road!

 

I have quite alot of weight to lose and have been looking for the healthy answer to lose weight.  I'm tired of all the yo-yo dieting, the gimmicks, the lies!  I just want to be healthy, screw the rest.  Yesterday I went to the grocery store and I did my shopping for this way of eating.

So there is my veggies (well for myself and my family - two children and a husband)   :)  I will grab more if needed throughout the upcoming few days :)  For meat, I have loaded my freezer with chicken filet, minced meat, fish, and grabbed some schnitzel as well.  Thursday, steak tartar is on sale, so will likely knab a bunch of it as well - YUM!!!. 

 

So, today is a new day!!!!  Woke up exhausted as usual.  I haven't been sleeping well due to over dreaming the last week approx.  I pulled myself out of bed and made breakfast.  Breakfast consisted of 3 eggs, a large tomato and a slice of breakfast meatloaf from here http://meatified.com/slow-cooker-breakfast-meatloaf/ (I omitted the flour btw, and it stayed together without a hitch!!!).  I hunted the recipe down yesterday and made it yesterday evening in preparation for today.  Also everything for breakfast was cooked in coconut oil - LOVE IT!!!!   I have two large glasses of water and of course, my favorite friend in the morning, a good old cup of black coffee  :D

 

At 8am, I leashed up my dog and out the door I went to walk my youngest daughter to school.  When I returned home, I baked 15 chicken legs in the oven to add to salads at lunchtime.  When finished, I peeled all the skin off and threw it and put the chicken on a plate to cool :)

 

I feel I didn't eat enough fats at breakfast though because around 10:30am, I felt hungry.  My stomach was screaming at me.  So I had an extra think piece of the breakfast meatloaf with homemade mayo from the book to hold me off to lunch and a glass of water.

3 large handfuls of spinach, chopped chicken, two hard boiled eggs and 3 diced strawberries tossed with homemade Balsamic Vinnigrette dressing.  Now... I really need to write down to add in my advocado because I forgot to add it with my breakfast and my lunch!!!  So I suppose I will just have to knab half of one quickly and eat it considering I just ate my salad :rolleyes:  I also had two more glasses of water as well.

 

As for dinner... not sure what I will make yet, although everything is preprepped in the fridge to grab and sate and inhale :lol:

Congratulations! Have you downloaded the meal planning template? Your meals look great for the amount of protein but you need more veggies and more variety of veggies. You should have 2-3 cups at each meal. Starchy veggies like sweet potatoes, squash and beets will help you feel satisfied longer. Also make sure you are drinking 1/2 your weight in oz of water everyday. So if you weigh 200 lbs you need to drink 100 oz of water or 12.5 - 8 oz glasses of water. Good Luck!

I'm aware I didn't get enough veggies at breakfast but I guarantee I did at lunch get a bit over 3 cups of spinach, if not closer to 4 cups.  I have not been able to find the full list of veggies over here where I live, so therefore, I need to be able to go with what I can get.  The only squash I have been able to find over here, which is not on the list of allowed veggies, is pumpkin squash and beets I have only found prepackaged, so I'm staying away from that with a ten foot pole.

Are you referring to the Whole30 shopping list?  That is not an exhaustive list: it's just to give you an idea of possibilities.

As long as what you eat is within the Whole30 rules, you're fine.

Congratulations on starting, Kerri!  And good luck to you.  I have 5 more days to complete the whole30, but will continue to the end of April as that was the commitment I made to myself when I started.  If I can do this with all the travelling we've been doing this past month, you can too!!

Yep.. I was referring to the list in the list :)  So pumpkin squash should be fine then.  I just don't want to mess this up lol.  Guess back to the store for me tonight!

Yes, pumpkin squash is completely fine - enjoy!

btw.. is sweet potatoes alright to have everyday at dinner type thing?  and also i saw on facebook, someone posted a recipe for lasagna made from plantains (http://stupideasypaleo.com/2013/04/16/paleo-plantain-beef-pie/).  Would I be correct to assume this would be safe to eat? (if I can find plantains, that is lol)  Sorry for the questions   :)

 

You can have sweet potatoes every day at whatever meal you like.

And that plantain beef pie is perfect - I've made it myself a few times, and it's delicious!  :)

Alrighty.  I didn't update what I made for dinner last night because I was rather sleepy.  So, last night for dinner I made a stirfry with tons of red peppers, carrots, broccoli, mushrooms and sprouts.  I added in some sesame seeds and some ginger powder.  I also roasted sweet potatoes in the oven sprinkled with olive oil, oregano, salt and peppers and made plain schnitzel on the side :)

 

This morning is a new day and I think I did actually sleep a bit better.  I don't feel horrible today, but to be honest, we never kept much junk in the house overal.  Mostly picked up something on weekends.  Although on weekdays we would have spaghetti and white potatoes, breads, etc.  So I'm curious what my body will do and how it'll react over the next few days.  

 

Breakfast - 7 eggs scrambled (my oldest daughter wanted to eat with me), cooked in coconut oil, with a TON of spinach - i put spinach in the pan until I couldn't put in anymore - then threw in a handful of cherry tomatoes and a huge handful of mushrooms, salt and peppers.  Each of us had a piece of the breakfast meatloaf on the side and I had half an advocado.  Had also 3 tall glasses of water and 1 cup of black coffee.

 

Mid - Morning - 2 tall glasses of water

 

Lunch - I had the same spinach salad as yesterday but today I also had 1/4 advocado as well and I fried up a small sweet potato, sprinkled with cinnamon, in coconut oil.  1 Tall glass of water.
