What constitutes 'high heat cooking'?

I know they say you should use animal fats or coconut oil for high heat cooking but what temperature is it safe to use olive or avocado oil to? I prefer them both and tend to cook things at either 350 in the oven or medium heat to saute. Is that okay? Other fats make me really nauseous...

I cooked with olive oil or avocado oil for a long time before I stopped using them for everything. You probably won't notice a problem. That doesn't mean there is no harm in it, but the issues are not obvious ones. I still use olive oil for things like making a spice and herb paste to put on a chicken before roasting it. I consider roasting at 350 degrees high heat, but do it anyway because I don't bother with melting ghee or coconut oil to make my paste. 

 

Basically, I don't know of a clear guideline. I would consider any use of an oven or stove top high heat. Nowadays, I mostly use olive oil on salads.
